Baked Garlic Parmesan Zucchini

Ingredients
- 4 medium zucchini, quartered lengthwise
- ½ cup grated parmesan
- ½ teaspoon dried thyme
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- ¼ teaspoon garlic powder
- Freshly ground black pepper to taste
- 2 Tablespoons olive oil
- 2 Tablespoons chopped fresh parsley
Directions
- Preheat the oven to 350°F. Coat a cooling rack with nonstick cooking spray and place onto a baking sheet; set aside.
- In a small bowl, combine Parmesan cheese, thyme, oregano, basil, garlic powder and pepper.
- Place the zucchini onto the cooling rack on top of the baking sheet and drizzle it with olive oil.
- Sprinkle with parmesan mixture.
- Place into preheated oven and bake approximately 15 minutes, until tender.
- Broil for 2-3 minutes or until crisp and golden brown.
- Garnish with parsley and serve immediately.
