Baked Garlic Parmesan Zucchini

Ingredients

  • 4 medium zucchini, quartered lengthwise
  • ½ cup grated parmesan
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ¼ teaspoon garlic powder
  • Freshly ground black pepper to taste
  • 2 Tablespoons olive oil
  • 2 Tablespoons chopped fresh parsley

Directions

  1. Preheat the oven to 350°F. Coat a cooling rack with nonstick cooking spray and place onto a baking sheet; set aside.
  2. In a small bowl, combine Parmesan cheese, thyme, oregano, basil, garlic powder and pepper.
  3. Place the zucchini onto the cooling rack on top of the baking sheet and drizzle it with olive oil.
  4. Sprinkle with parmesan mixture.
  5. Place into preheated oven and bake approximately 15 minutes, until tender.
  6. Broil for 2-3 minutes or until crisp and golden brown.
  7. Garnish with parsley and serve immediately.
