zuchini alfredo

Servings per recipe: 2 | Prep time: 15 minutes | Cook time: 45 minutes

Love the creamy indulgence of Alfredo but want to keep things on the lighter side? This whole wheat fettuccine alfredo with zucchini is a game-changer. By blending simmered garlic into a savory broth base and using reduced-fat sour cream, you get that signature velvety texture with more fiber and less guilt.

Ingredients

  • 4 large garlic cloves, peeled
  • 4 ounces whole wheat fettuccine
  • 1 small zucchini, cut into matchsticks
  • 2 teaspoons cornstarch, mixed with 1 tablespoon water
  • 2 tablespoons reduced-fat sour cream
  • Pinch of freshly ground nutmeg
  • 1/8 teaspoon freshly ground pepper, to taste
  • ¾ cup freshly grated Parmesan cheese, divided
  • 1 tablespoon chopped fresh parsley

Directions

  1. Combine broth and garlic cloves in a small saucepan and bring to a boil over high heat. Cover and reduce the heat to a simmer. After cooking garlic mixture for about 10 minutes, bring a separate large saucepan of water to a boil. Continue to cook the garlic mixture until the garlic cloves are soft, about 15 minutes total cooking time.
  2. In the large saucepan of boiling water, add fettuccine noodles and cook for approximately 8 minutes, stirring often. Add zucchini to fettuccine and cook for about one minute more or until fettuccine is tender.
  3. Transfer the garlic mixture to a blender and puree until it is smooth. Once the mixture is smooth, return it to the small saucepan and bring it to a simmer over medium-high heat. Add the cornstarch and water mixture, whisking until slightly thickened, about 15 seconds. Remove the saucepan from heat and whisk in sour cream, nutmeg, and pepper. Return the saucepan to the stove on very low heat to keep the sauce mixture warm.
  4. Drain the pasta and zucchini. Place it into a large bowl. Add the sauce mixture and ½ cup of the Parmesan cheese. Toss to coat well. Sprinkle with fresh chopped parsley and the remaining ¼ cup parmesan. Serve immediately.
