Glazed Mini Carrots

Looking for a new holiday side dish or an easy weeknight vegetable? These glazed carrots are quick to make and delicious. 

Ingredients

  • 3 cups mini carrots (approximately 1 pound)
  • 1/3 cup water
  • 1 tablespoon honey
  • 2 teaspoons unsalted butter
  • ¼ teaspoon salt
  • 1 tablespoon lemon juice
  • Freshly ground black pepper
  • 2 tablespoons chopped fresh parsley

Directions

  • Combine carrots, water, honey, butter and salt in a large skillet.
  • Bring to a simmer over medium-high heat.
  • Cover and cook until tender, approximately 5-7 minutes.
  • Uncover and cook, stirring often until the liquid is a syrupy glaze, approximately 1-2 minutes.
  • Stir in lemon juice and pepper.
  • Sprinkle with parsley and serve.
